The excitement is still there over the Alolan Eggs, but we expect it to fade quickly. Why, you ask? Let us explain.
DIVERSITY: The 7KM Eggpool is the smallest out of all distance categories with a current roster of four possible hatches. With the rarity of Alolan Vulpix and the overwhelming commonness of Alolan Meowth, it may as well be three. There needs to be more of a random element in what we hatch from these special Eggs instead of anticipating an Alolan Meowth every time.
In all fairness, we still have Alolan Geodude and Alolan Diglett that could be added. We know from a Niantic announcement that they will spawn in the wild at the time of Pokémon GO Fest 2018, but that does not mean they won't enter the 7KM Eggpool. Something similar could be said for Alolan Rattata.
LIMITATIONS: Diversity in the 7KM Eggpool will only take you so far. Even if Niantic added Alolan Geodude, Diglett, and Rattata to the roster, that only gives us seven possible options. If Niantic wants to keep 7KM Eggs as a regional-variants-only roster, then the Egg group has no future.
The whole concept of regional variants was first officially seen in Pokémon Sun and Pokémon Moon. The Alolan forms reappeared in the following Pokémon Ultra Sun and Pokémon Ultra Moon. Those games were rumored to release new regional variants, but those rumors turned out to bear no fruit in that regard. The Alolan forms will also appear in the upcoming Pokémon: Let's Go, Pikachu! and Pokémon: Let's Go, Eevee! games.
History lessons aside, it doesn't seem like we'll be getting any more regional variants from the Generation 7 main-series games. But that does not mean that the games in 2019 (which are implied to be Generation 8) won't give us any new regional variants. In the end, it's up to GAME FREAK whether they want to add new regional forms or not.

Niantic could always add different types of Pokémon to the roster. As a hypothetical, they could add the baby Pokémon from Generation 4 or fan-favorite Pokémon, such as Generation 5's Zorua.
